1/3 C. olive oil
1 medium yellow onion, chopped
1 large stalk celery, chopped
1 large russet potato, peeled and chopped
4 large Crimini mushrooms, chopped
4 large cloves garlic, minced
1 medium zucchini, sliced
1/2 C. red kidney beans
1/3 C. red lentils
10 large cherry tomatoes, halved
water
salt and pepper to taste
2 Tbsp. dill weed
1 Turkish Bay leaf
healthy dash of Sriracha sauce
1. Brown celery and onion in olive oil a few minutes
2. Add vegetables and water to cover
3. Add remaining spices
4. Bring to a boil, then cover and simmer for 1 hour
